XinCraft 9" Japan Chef Buffalo Horn/Rosewood/G10, Damascus holds a special place in the Xin Cutlery lineup as an example of an artisanal approach to a modern kitchen knife inspired by Japanese tradition. The XinCraft line was created for users who expect not only high-quality materials, but also a conscious design in which form directly follows function. A combination of the features of a chef's knife and precision portioning knives, the Kiritsuke is a demanding yet highly versatile tool. This model was handmade by experienced craftsmen, which translates into consistency of geometry, meticulous finish and high blade culture. Blade of san-mai construction is based on a core of VG10 steel , sheathed with 67-layer damask, which provides very good edge stability, wear resistance and high cutting precision. The kiritsuke profile is characterized by a clearly defined ridge line and a long, straight section of the cutting edge, which promotes smooth, controlled movements during slicing. The convex grind used gives the blade a gently convex geometry, increasing the efficiency of material penetration and reducing drag when working with products of varying textures. The Handle, made of a combination of natural buffalo horn, rosewood and G10 composite, is designed for long-lasting use and a stable grip. Its contoured design supports the natural positioning of the hand, ensuring good balance of the entire knife and high blade control even during long cooking sessions. XinCraft XC116 is a tool aimed at conscious users who are looking for a knife with distinct character, high precision and durability, capable of coping with both everyday work and more demanding culinary tasks.

VG-10 - a grade of high-carbon stainless alloy tool steel created specifically for making premium blades and knives. The steel recipe was developed in Japan by Takefu Special Steel co. Ltd, which is headquartered in Takefu, Fukui Prefecture. Initially used in the production of kitchen knives, it quickly found use as an excellent material for utility blades. Due to import restrictions, almost all knives made of VG-10 steel are produced in Seki, Japan.

San-mai is a special three-layer blade design, in which the hard core that forms the cutting edge is “wrapped” with two more flexible layers of steel. This combination makes it possible to achieve very good sharpness and its long retention, while at the same time making the blade more resistant to breakage and damage compared to a classic single-steel wedge. It is a solution derived from Japanese blacksmithing traditions, valued both for its functional properties and the characteristic transition drawing between the core and outer layers visible on the Blade.

Blade - with a kiritsuke profile is designed for maximum cutting control and versatility in the kitchen. The long, straight line of the cutting edge allows the blade to run smoothly while slicing, and the clearly marked tip allows for precise operations requiring accuracy. The convex grind used gives the edge a gently convex cross-section, which improves the ability to penetrate the material and promotes clean separation of slices without wedging. The multi-layered damascus structure, finished with an acid etched finish, not only emphasizes the knife's craftsmanship, but also promotes blade stability and even stress distribution during operation. The overall design emphasizes smoothness of cutting, precision and predictable behavior of the blade with various cooking techniques.

Handle - is a composition of natural buffalo horn, rosewood and G10 composite, combined in a design for high durability and stability. Its shape was developed so that the hand naturally aligns with the axis of the blade, which improves control and reduces fatigue during prolonged work. The use of different materials allows for the right balance between the weight of the Handle and Blade, resulting in a neutral, predictable knife handling. Smooth transitions between Handle segments and a careful surface finish ensure a secure grip, regardless of the slicing technique or the type of products being processed.
