- Santoku Granton Edge Black Polymer, Polished, an advanced Santoku kitchen knife with a forged blade and Granton Edge system, ideal for working with vegetables, meat, and fish. Precision cutting, light handling, and full control in one tool.

Santoku Granton Edge Black Polymer, Polished is a modern tool inspired by Japanese kitchen philosophy, adapted to the needs of today's users. Manufactured by MAM – Filmam, Lda., it combines traditional forging with functional details that make everyday kitchen work more precise and comfortable. The blade is made of polished X30Cr13 stainless steel, ensuring resistance to kitchen conditions and easy maintenance. The long Granton Edge grooves, characteristic of this model, reduce resistance when cutting and make it easier to cut thin slices without sticking to the blade. The handle is made of durable POM plastic, suitable for intensive use, and has been designed with ergonomics and stability in mind. The 66903 model is the perfect choice for those who expect professional performance and modern aesthetics in a single compact kitchen knife.
X30Cr13 is a martensitic chrome steel with a nominal chemical composition of approximately 0.30% carbon (C) and 13% chromium (Cr). The addition of chromium in this amount provides significant corrosion and rust resistance in many environments. The higher carbon content compared to some other stainless steels translates into good hardness (typically in the range of 50-55 HRC after appropriate heat treatment) and the ability to maintain sharpness. It is widely used for the manufacture of knives (especially kitchen and table knives), surgical instruments, pump components, and other applications requiring corrosion resistance and moderate mechanical strength.
Granton Edge (also known as dimpled blade) is a distinctive oval or elongated indentation milled alternately on both sides of the blade, just above the cutting edge. Its main advantage is friction reduction – the indentations create air pockets, reducing food (e.g., meat, fish, cheese, vegetables) sticking to the blade. This facilitates smooth cutting of thin, even slices (e.g., salmon, roast meat) with less effort. The name comes from Granton Knifemakers of Sheffield, who patented the design in 1928, although the term is now used generically. The Granton edge is often found on Santoku knives, slicing knives, and some chef's knives. It is important not to confuse it with a serrated blade, which has teeth on the cutting edge itself – the Granton edge is indentations on the side of the blade with a smooth cutting edge.
Blade - a wide Santoku-type blade has been used, which is ideal for tasks requiring rhythmic, repetitive movements, such as chopping herbs, cutting vegetables or slicing meat. The sloping tip of the blade and the ideal length give you complete control over the cut, even with delicate ingredients. Symmetrical Granton Edge indentations are placed along the blade, creating a thin layer of air between the blade and the food, preventing it from sticking. This solution significantly speeds up work and improves the aesthetics of serving. X30Cr13 (AISI 420) steel guarantees good sharpness retention, rust resistance and easy sharpening, while the polished finish adds elegance and makes it easy to keep clean. The forged construction improves the rigidity of the blade and ensures perfect balance, which translates into greater comfort during longer periods of use.
Handle - made of technical POM plastic, which is resistant to high temperatures, moisture and chemicals. Thanks to these properties, the handle is ideal for demanding kitchen environments. The handle profile is designed to facilitate maneuvering and maintain grip stability even during dynamic movements. The smooth surface prevents residue from sticking and facilitates cleaning, while the closed design increases hygiene. Three stainless steel rivets ensure a durable and secure attachment to the blade, which translates into the longevity of the entire tool. This is a balanced and ergonomic Santoku knife that is perfect for the daily rhythm of a professional kitchen.
